22 Easy Dinner Recipes for Busy Weeknights (That I’ll Never Stop Making)

October 9, 2026·29 min read
Spaghetti bolognese plate, a classic easy weeknight dinner

The 5 p.m. panic is real. These 22 recipes are my answer to it.

Every weeknight, millions of us open the fridge, stare, and close it again. I’ve been there more times than I can count — which is exactly why I started keeping a running list of dinners that are genuinely easy. Not “easy if you went to culinary school” easy. Easy like: one pan, ingredients you already buy, on the table in 15 to 45 minutes, and good enough that nobody asks “what’s for dinner tomorrow?” with dread.

These are easy dinner recipes I’ve cooked on repeat in my own kitchen — tested on tired Tuesdays, not styled for photoshoots. Each one tells you why it works, what to watch out for, and exactly how long it takes. No fancy equipment. No 20-ingredient lists. Just dinner, solved.

5 Speedy Chicken Dinners

Chicken is the weeknight workhorse — affordable, fast, and nearly impossible to make boring if you know a few tricks. These five are the ones I reach for when the day ran long and patience ran short.

1. 20-Minute Honey Garlic Chicken

Why it works: Bite-size chicken pieces cook in minutes, and the honey garlic glaze is three pantry ingredients whisked together. The trick is searing the chicken first, then adding the sauce at the end so the honey caramelizes instead of burning.

Ingredients:
– 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
– 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder
– 2 tbsp vegetable oil
– 1/3 cup honey
– 1/4 cup low-sodium soy sauce
– 4 cloves garlic, minced
– 1 tbsp apple cider vinegar
– 2 green onions, sliced, for serving

Steps:
1. Pat the chicken dry and season with salt, pepper, and garlic powder.
2. Heat the oil in a large skillet over medium-high heat until shimmering. Add the chicken in a single layer and sear 3-4 minutes per side until golden and cooked through. Remove to a plate.
3. Lower the heat to medium. Add the honey, soy sauce, garlic, and vinegar to the pan, stirring and scraping up the browned bits.
4. Simmer 2-3 minutes until the sauce thickens enough to coat a spoon.
5. Return the chicken to the pan and toss to glaze. Top with green onions and serve over rice.

Time: Prep 5 min | Cook 15 min | Total 20 min | Servings: 4

My take: I keep the sauce ingredients in a jar in the fridge — mixed and ready — so this becomes a true 15-minute dinner on the worst days.

20-Minute Honey Garlic Chicken

Bite-size chicken pieces cook in minutes, and the honey garlic glaze is three pantry ingredients whisked together. The trick is searing the chicken first, then adding the sauce at the end so the honey caramelizes instead of burning.
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings: 4
Course: Dinner

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder
  • 2 tbsp vegetable oil
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 2 green onions, sliced for serving

Method

2. Sheet Pan Chicken Fajitas

Why it works: Everything roasts together on one pan while you do literally anything else. High heat chars the peppers and onions just like a sizzling restaurant platter, minus the drama.

Ingredients:
– 1 1/2 lbs boneless, skinless chicken breasts, sliced into thin strips
– 3 bell peppers (mixed colors), sliced
– 1 large red onion, sliced
– 3 tbsp olive oil
– 2 tbsp fajita seasoning (1 packet works)
– 1 tsp salt
– 8 small flour tortillas, warmed
– Lime wedges, sour cream, and guacamole, for serving

Steps:
1. Heat the oven to 425°F. Line a large rimmed sheet pan with foil.
2. Toss the chicken, peppers, and onion with olive oil, fajita seasoning, and salt right on the pan. Spread into an even layer.
3. Roast 18-20 minutes, stirring once halfway, until the chicken is cooked through and the vegetables have charred edges.
4. Squeeze lime over everything and pile into warm tortillas with your favorite toppings.

Time: Prep 10 min | Cook 20 min | Total 30 min | Servings: 4

My take: Double the batch and the leftovers become tomorrow’s quesadilla filling. Two dinners, one round of chopping.

3. Slow Cooker Salsa Verde Chicken

Why it works: Two ingredients in the morning, fall-apart chicken by dinner. The salsa verde does all the seasoning work — tangy, bright, and nothing like the bland “dump dinners” people warn you about.

Ingredients:
– 2 lbs boneless, skinless chicken breasts or thighs
– 1 jar (16 oz) salsa verde (pick one you’d happily eat with chips)
– 1 tsp cumin
– 1/2 tsp salt
– Cooked rice, tortillas, or salad greens, for serving

Steps:
1. Place the chicken in the slow cooker. Pour the salsa verde over the top and sprinkle with cumin and salt.
2. Cover and cook on LOW 6-7 hours or HIGH 3-4 hours, until the chicken shreds easily with a fork.
3. Shred the chicken right in the cooker and stir it back through the sauce. Serve in bowls, tacos, or over greens.

Time: Prep 5 min | Cook 6 hrs | Total 6 hrs 5 min (hands-off) | Servings: 6

My take: Thighs stay juicier than breasts on the long cook — and this freezes beautifully for up to 3 months.

4. Chicken Parmesan Meatballs

Why it works: All the cozy flavor of chicken parm with none of the breading-frying-sauce layering fuss. The meatballs bake while the sauce simmers, and everything meets under a blanket of mozzarella.

Ingredients:
– 1 1/2 lbs ground chicken
– 1/2 cup Italian breadcrumbs
– 1/2 cup grated parmesan, plus more for serving
– 1 egg, beaten
– 2 cloves garlic, minced
– 1 tsp Italian seasoning, 1 tsp salt, 1/2 tsp pepper
– 1 jar (24 oz) marinara sauce
– 1 1/2 cups shredded mozzarella

Steps:
1. Heat the oven to 400°F. Line a baking sheet with parchment.
2. Mix the ground chicken, breadcrumbs, parmesan, egg, garlic, and seasonings gently with your hands — don’t overwork it or the meatballs go dense.
3. Roll into 1 1/2-inch balls (about 20) and arrange on the sheet. Bake 15 minutes.
4. Meanwhile, warm the marinara in an oven-safe skillet over medium heat.
5. Nestle the baked meatballs into the sauce, top with mozzarella, and broil 2-3 minutes until bubbly and golden. Serve over pasta or in toasted rolls.

Time: Prep 15 min | Cook 20 min | Total 35 min | Servings: 4-5

My take: These reheat better than almost any chicken dish I make — the sauce keeps them moist for days.

5. Greek Lemon Chicken and Potatoes

Why it works: One pan, Mediterranean flavors, and the potatoes roast in the lemony chicken drippings. It’s the kind of dinner that tastes like Sunday but cooks like Tuesday.

Ingredients:
– 6 bone-in, skin-on chicken thighs (about 2 lbs)
– 1 1/2 lbs baby potatoes, halved
– 1/4 cup olive oil
– 1/4 cup fresh lemon juice (about 2 lemons)
– 4 cloves garlic, minced
– 2 tsp dried oregano
– 1 tsp salt, 1/2 tsp black pepper

Steps:
1. Heat the oven to 425°F.
2. Whisk the olive oil, lemon juice, garlic, oregano, salt, and pepper in a large bowl. Add the chicken and potatoes and toss to coat.
3. Arrange everything on a rimmed sheet pan — chicken skin-side up, potatoes cut-side down.
4. Roast 35-40 minutes until the chicken skin is crisp and golden and the potatoes are tender and caramelized. Spoon the pan juices over before serving.

Time: Prep 10 min | Cook 40 min | Total 50 min | Servings: 4

My take: Don’t skip the pan juices — that’s where all the lemon-garlic magic lives. Crusty bread is mandatory.

5 Pasta and One-Pot Dinners

Pasta night is sacred in my house, and one-pot cooking is sacred in my sink. This section is where the two meet — maximum comfort, minimum cleanup.

6. One-Pot Lemon Parmesan Orzo

Why it works: Orzo cooks directly in seasoned broth, releasing starch that turns the liquid into a silky sauce — no draining, no separate sauce pan. Lemon and parmesan keep it bright instead of heavy.

Ingredients:
– 2 tbsp butter
– 3 cloves garlic, minced
– 1 1/2 cups dry orzo
– 3 1/2 cups low-sodium chicken broth
– Zest and juice of 1 lemon
– 1 cup grated parmesan
– 2 cups baby spinach
– Salt and black pepper to taste

Steps:
1. Melt the butter in a large pot over medium heat. Add the garlic and orzo; toast 2 minutes, stirring, until the orzo smells nutty.
2. Pour in the broth and bring to a boil, then reduce to a simmer. Cook 10-12 minutes, stirring often, until the orzo is tender and most liquid is absorbed.
3. Stir in the lemon zest, lemon juice, and parmesan until creamy. Fold in the spinach and let it wilt, 1-2 minutes. Season with salt and pepper.

Time: Prep 5 min | Cook 15 min | Total 20 min | Servings: 4

My take: Add shredded rotisserie chicken or white beans and it becomes a complete meal. I’ve done both; no regrets either way.

7. Easy Baked Ziti

Why it works: It’s lasagna’s low-maintenance cousin — same cozy layers of pasta, sauce, and cheese, but you just toss everything together instead of layering. Feeds a crowd, reheats like a dream.

Ingredients:
– 1 lb ziti or penne
– 1 lb Italian sausage, casings removed (or ground beef)
– 1 jar (24 oz) marinara sauce
– 1 container (15 oz) ricotta cheese
– 2 cups shredded mozzarella, divided
– 1/2 cup grated parmesan
– 1 egg, beaten (keeps the ricotta creamy, not grainy)

Steps:
1. Heat the oven to 375°F. Cook the pasta 2 minutes less than the package says; drain.
2. Brown the sausage in a large oven-safe skillet or pot, breaking it up, 6-8 minutes. Drain excess fat.
3. Stir in the marinara and the drained pasta. In a bowl, mix the ricotta, egg, 1 cup mozzarella, and parmesan.
4. Dollop the ricotta mixture over the pasta and swirl it through roughly — imperfect swirls look rustic and taste great.
5. Top with the remaining mozzarella and bake 20-25 minutes until bubbly and golden. Rest 5 minutes before serving.

Time: Prep 15 min | Cook 30 min | Total 45 min | Servings: 8

My take: Assemble it in the morning, refrigerate, and bake at night — add 10 minutes to the bake time. Weeknight hero move.

8. Creamy Sun-Dried Tomato Penne

Why it works: Sun-dried tomatoes bring intense, concentrated flavor that makes a simple cream sauce taste like you simmered it for hours. Weeknight luxury in 25 minutes.

Ingredients:
– 12 oz penne
– 2 tbsp butter
– 3 cloves garlic, minced
– 1/2 cup sun-dried tomatoes in oil, drained and chopped
– 1 tsp Italian seasoning
– 1 1/2 cups heavy cream
– 1 cup grated parmesan
– 2 cups baby spinach
– Red pepper flakes and extra parmesan, for serving

Steps:
1. Cook the penne in salted boiling water until just al dente; reserve 1 cup pasta water and drain.
2. Meanwhile, melt the butter in a large skillet over medium heat. Add the garlic, sun-dried tomatoes, and Italian seasoning; cook 1 minute until fragrant.
3. Pour in the cream and simmer gently 3-4 minutes until slightly thickened.
4. Stir in the parmesan until melted, then toss in the pasta with a splash of pasta water until glossy.
5. Fold in the spinach, let it wilt, and serve with red pepper flakes and more parmesan.

Time: Prep 5 min | Cook 20 min | Total 25 min | Servings: 4

My take: The oil from the sun-dried tomato jar is liquid gold — I use a spoonful of it instead of butter sometimes for even deeper flavor.

9. 30-Minute Skillet Lasagna

Why it works: Broken lasagna noodles cook right in the sauce — no boiling, no layering, no baking dish to scrub. You get every lasagna flavor (beefy, cheesy, saucy) in half the time.

Ingredients:
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 jar (24 oz) marinara sauce
– 2 cups water
– 8 oz lasagna noodles, broken into 2-inch pieces
– 1 cup ricotta cheese
– 1 1/2 cups shredded mozzarella
– Fresh basil, for serving

Steps:
1. Brown the beef with the onion in a large deep skillet over medium-high heat, 6-7 minutes. Add the garlic; cook 1 minute. Drain excess fat.
2. Stir in the marinara and water; bring to a simmer.
3. Stir in the broken noodles, making sure they’re submerged. Cover and simmer 15-18 minutes, stirring occasionally, until the noodles are tender.
4. Dollop ricotta over the top, sprinkle with mozzarella, cover, and cook 3-4 minutes until the cheese melts. Rest 5 minutes, top with basil, and serve.

Time: Prep 10 min | Cook 25 min | Total 35 min | Servings: 6

My take: My kids call this “deconstructed lasagna” and request it more than actual lasagna now. I don’t argue.

10. Sausage and Tortellini Soup

Why it works: Cheese tortellini cooks in minutes and turns a simple sausage soup into something hearty enough for dinner. One pot, 30 minutes, and it tastes like it simmered all afternoon.

Ingredients:
– 1 lb Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 6 cups low-sodium chicken broth
– 1 can (14.5 oz) diced tomatoes
– 1 tsp Italian seasoning
– 1 bag (20 oz) refrigerated cheese tortellini
– 3 cups baby spinach or kale
– 1/2 cup heavy cream (optional but lovely)
– Grated parmesan, for serving

Steps:
1. Brown the sausage in a large pot over medium-high heat, breaking it up, 6-8 minutes. Add the onion; cook 4 minutes. Add the garlic; cook 1 minute.
2. Pour in the broth, tomatoes, and Italian seasoning. Bring to a boil.
3. Stir in the tortellini and cook 4-5 minutes until tender and floating.
4. Stir in the spinach until wilted, then the cream if using. Serve with parmesan.

Time: Prep 10 min | Cook 20 min | Total 30 min | Servings: 6

My take: This is my sick-day soup and my busy-day soup — it covers a lot of emotional ground for one pot.

4 Beef and Pork Dinners

Beef and pork bring the hearty, stick-to-your-ribs energy that makes a weeknight feel like a weekend. These four keep the effort low and the flavor high.

11. 15-Minute Beef and Broccoli Stir-Fry

Why it works: Thin-sliced beef sears in 2 minutes flat, and a simple 4-ingredient sauce tastes like takeout. The secret is slicing against the grain — that’s what makes budget-friendly cuts tender instead of chewy.

Ingredients:
– 1 lb flank steak or sirloin, sliced very thin against the grain
– 4 cups broccoli florets
– 2 tbsp vegetable oil, divided
– 1/3 cup low-sodium soy sauce
– 2 tbsp brown sugar
– 1 tbsp cornstarch
– 3 cloves garlic, minced
– 1 tsp fresh ginger, grated (or 1/4 tsp ground)
– Cooked rice, for serving

Steps:
1. Whisk the soy sauce, brown sugar, cornstarch, garlic, and ginger in a small bowl. Set aside.
2. Heat 1 tbsp oil in a large skillet or wok over high heat until smoking. Sear the beef in a single layer, 1-2 minutes per side. Remove to a plate.
3. Add the remaining oil and the broccoli with 2 tbsp water. Cover and steam 2-3 minutes until bright green and crisp-tender.
4. Return the beef to the pan, pour in the sauce, and toss 1-2 minutes until the sauce thickens and glosses everything. Serve over rice.

Time: Prep 10 min | Cook 8 min | Total 18 min | Servings: 4

My take: Partially freeze the beef for 20 minutes before slicing — it firms up and you get those paper-thin slices that make all the difference.

12. 3-Ingredient Slow Cooker Pulled Pork

Why it works: Pork shoulder + a can of root beer + BBQ sauce. That’s it. The soda tenderizes and sweetens, the slow cooker does the rest, and you get pulled pork that rivals any smokehouse — with about 5 minutes of actual work.

Ingredients:
– 3-4 lb pork shoulder (Boston butt)
– 1 can (12 oz) root beer (not diet)
– 1 1/2 cups BBQ sauce, plus more for serving
– 1 tbsp salt, 1 tsp black pepper
– Brioche buns and coleslaw, for serving

Steps:
1. Season the pork shoulder all over with salt and pepper. Place it in the slow cooker.
2. Pour the root beer around (not over) the pork. Cover and cook on LOW 8-10 hours or HIGH 5-6 hours, until it falls apart when poked.
3. Lift the pork onto a cutting board and shred with two forks, discarding large pieces of fat.
4. Skim the fat from the cooking liquid, then toss the shredded pork with BBQ sauce, adding splashes of the cooking liquid to keep it juicy. Pile onto buns with coleslaw.

Time: Prep 5 min | Cook 8 hrs | Total 8 hrs 5 min (hands-off) | Servings: 10-12

My take: This makes a mountain of pork — freeze half in portion bags and you’ve got instant tacos, quesadillas, and sandwiches for weeks.

13. Cheeseburger Skillet

Why it works: Everything you love about a cheeseburger — beefy, cheesy, pickley — in one skillet with pasta instead of a bun. It scratches the burger itch on nights when firing up the grill isn’t happening.

Ingredients:
– 1 lb ground beef (80/20)
– 1 onion, diced
– 2 cloves garlic, minced
– 2 tbsp ketchup, 1 tbsp yellow mustard
– 12 oz elbow macaroni or shells
– 3 cups beef broth
– 1 cup milk
– 2 cups shredded cheddar cheese
– Diced pickles and shredded lettuce, for serving

Steps:
1. Brown the beef with the onion in a large deep skillet over medium-high heat, 6-7 minutes. Add the garlic; cook 1 minute. Drain excess fat.
2. Stir in the ketchup, mustard, dry pasta, broth, and milk. Bring to a boil.
3. Reduce to a simmer, cover, and cook 12-14 minutes, stirring occasionally, until the pasta is tender.
4. Remove from heat and stir in the cheddar until melted and creamy. Top with pickles and lettuce and serve right from the skillet.

Time: Prep 10 min | Cook 20 min | Total 30 min | Servings: 6

My take: A squirt of burger sauce (mayo + ketchup + relish) drizzled on top takes this from good to dangerously good.

14. Honey Garlic Pork Chops

Why it works: A screaming-hot sear gives you a golden crust, then a quick honey garlic pan sauce finishes the job in the same skillet. Pork chops get a bad rap for being dry — the trick is not overcooking them, and this recipe’s timing is foolproof.

Ingredients:
– 4 bone-in pork chops, 1-inch thick (about 2 lbs)
– 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp paprika
– 2 tbsp vegetable oil
– 4 cloves garlic, minced
– 1/3 cup honey
– 1/4 cup low-sodium soy sauce
– 1 tbsp apple cider vinegar

Steps:
1. Pat the chops dry and season both sides with salt, pepper, and paprika. Let sit at room temperature 15 minutes.
2. Heat the oil in a large skillet over medium-high heat until shimmering. Sear the chops 4-5 minutes per side until golden and the internal temperature reads 145°F. Remove to a plate and tent with foil.
3. Lower the heat to medium. Add the garlic; stir 30 seconds. Add the honey, soy sauce, and vinegar, scraping up the browned bits.
4. Simmer 2-3 minutes until slightly thickened. Return the chops to the pan, spoon sauce over, and rest 3 minutes before serving.

Time: Prep 15 min | Cook 15 min | Total 30 min | Servings: 4

My take: Pull the chops at 140-145°F and let them rest — carryover heat finishes them juicy. Anything past 160°F is where dryness lives. I check USDA temperature guidelines to be sure.

4 Meatless Dinners

Meatless Mondays, tight grocery budgets, or just a craving for something lighter — whatever the reason, these four prove vegetarian dinners can be the highlight of the week, not the consolation prize.

15. Black Bean and Corn Enchiladas

Why it works: Canned beans and frozen corn mean zero prep work, and the enchilada sauce (store-bought is fine) ties it all together under melted cheese. Hearty enough that nobody misses the meat.

Ingredients:
– 2 cans (15 oz each) black beans, drained and rinsed
– 1 1/2 cups frozen corn, thawed
– 1 can (4 oz) diced green chiles
– 1 tsp cumin, 1 tsp chili powder, 1/2 tsp salt
– 1 can (19 oz) red enchilada sauce, divided
– 8 flour tortillas (8-inch)
– 2 cups shredded Monterey Jack cheese, divided
– Sour cream, cilantro, and diced avocado, for serving

Steps:
1. Heat the oven to 375°F. Spread 1/2 cup enchilada sauce in a 9×13-inch baking dish.
2. In a bowl, mash one can of beans roughly with a fork (this makes the filling creamy), then stir in the whole beans, corn, green chiles, cumin, chili powder, salt, and 1 cup of cheese.
3. Warm the tortillas 30 seconds in the microwave so they roll without cracking. Fill each with about 1/2 cup of filling, roll up, and place seam-side down in the dish.
4. Pour the remaining sauce over the top and sprinkle with the remaining cheese.
5. Cover with foil and bake 20 minutes; uncover and bake 10 more until bubbly. Rest 5 minutes, then serve with toppings.

Time: Prep 15 min | Cook 30 min | Total 45 min | Servings: 4-6

My take: These are even better the next day — make the whole pan Sunday and eat well all week.

16. Shakshuka (Eggs in Spicy Tomato Sauce)

Why it works: Eggs poached directly in smoky tomato sauce — it’s a one-pan wonder that works for dinner just as well as brunch. Crusty bread for scooping is non-negotiable.

Ingredients:
– 2 tbsp olive oil
– 1 onion, diced
– 1 red bell pepper, diced
– 3 cloves garlic, minced
– 1 tsp smoked paprika, 1 tsp cumin, 1/4 tsp red pepper flakes
– 1 can (28 oz) crushed tomatoes
– 1/2 tsp salt, 1/4 tsp black pepper
– 6 eggs
– 1/2 cup crumbled feta
– Fresh cilantro or parsley, for serving
– Crusty bread, for scooping

Steps:
1. Heat the olive oil in a large oven-safe skillet over medium heat. Cook the onion and bell pepper 6-7 minutes until soft. Add the garlic, paprika, cumin, and red pepper flakes; cook 1 minute.
2. Pour in the crushed tomatoes, salt, and pepper. Simmer 10 minutes until slightly thickened.
3. Make 6 small wells in the sauce with the back of a spoon and crack an egg into each.
4. Cover and cook 5-7 minutes until the whites are set but the yolks are still runny. (For firmer yolks, go 8-9 minutes.)
5. Sprinkle with feta and herbs. Serve straight from the pan with bread.

Time: Prep 10 min | Cook 20 min | Total 30 min | Servings: 3-4

My take: The runny yolk mixing into the sauce is the whole point — don’t overcook the eggs or you lose the magic.

17. Crispy Gnocchi with Burst Tomatoes

Why it works: Pan-fried gnocchi gets golden and crispy on the outside, pillowy inside — a completely different (and better) experience than boiled. Burst cherry tomatoes make an instant sauce with garlic and basil.

Ingredients:
– 2 packages (16 oz each) shelf-stable potato gnocchi
– 3 tbsp olive oil, divided
– 2 pints cherry tomatoes
– 4 cloves garlic, thinly sliced
– 1/2 tsp red pepper flakes
– 1/2 cup grated parmesan, plus more for serving
– 1/2 cup torn fresh basil
– Salt and black pepper

Steps:
1. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the gnocchi in a single layer (work in two batches if needed) and cook undisturbed 3-4 minutes until golden and crisp on one side. Flip and crisp 2-3 minutes more. Remove to a plate.
2. In the same skillet, add the remaining oil, tomatoes, garlic, red pepper flakes, and a pinch of salt. Cook 5-6 minutes, pressing the tomatoes with a spoon, until they burst and release their juices.
3. Return the gnocchi to the pan and toss to coat in the tomato sauce, 1-2 minutes.
4. Off the heat, stir in the parmesan and basil. Serve with extra parmesan.

Time: Prep 5 min | Cook 20 min | Total 25 min | Servings: 4

My take: Don’t boil the gnocchi first — straight from the package into the hot pan is what gives you the crispy edges. Trust the process.

18. Lentil Bolognese

Why it works: Brown lentils mimic the hearty texture of ground meat in a rich tomato sauce, at a fraction of the cost. Even dedicated carnivores in my house ask for seconds of this one.

Ingredients:
– 2 tbsp olive oil
– 1 onion, diced
– 2 carrots, diced
– 2 celery stalks, diced
– 3 cloves garlic, minced
– 1 1/2 cups dry brown lentils, rinsed
– 1 can (28 oz) crushed tomatoes
– 4 cups vegetable broth
– 2 tbsp tomato paste
– 1 tsp dried oregano, 1 tsp dried basil
– 12 oz spaghetti or rigatoni
– Grated parmesan, for serving

Steps:
1. Heat the olive oil in a large pot over medium heat. Cook the onion, carrots, and celery 7-8 minutes until softened. Add the garlic and tomato paste; cook 2 minutes, stirring.
2. Add the lentils, crushed tomatoes, broth, oregano, and basil. Bring to a boil, then reduce to a simmer.
3. Cook uncovered 30-35 minutes, stirring occasionally, until the lentils are tender and the sauce is thick. Season with salt and pepper.
4. Meanwhile, cook the pasta. Serve the lentil bolognese over pasta with parmesan.

Time: Prep 10 min | Cook 40 min | Total 50 min | Servings: 6

My take: This tastes even better on day two, and it freezes perfectly — I always make a double batch and freeze half in dinner-size portions.

4 Seafood Dinners

Fish and seafood feel fancy, but these four are weeknight-fast. The rule is simple: hot pan, short cook time, and pull it a minute before you think it’s done.

19. Sheet Pan Shrimp Boil

Why it works: All the fun of a seafood boil with none of the giant pot. Shrimp, sausage, corn, and potatoes roast together with Old Bay seasoning — dump it on newspaper (or a sheet pan) and dig in.

Ingredients:
– 1 lb baby potatoes, halved
– 3 tbsp olive oil, divided
– 1 tbsp Old Bay seasoning, divided
– 12 oz smoked sausage, sliced into 1/2-inch coins
– 3 ears corn, cut into thirds
– 1 1/2 lbs large shrimp, peeled and deveined
– 4 tbsp butter, melted
– Lemon wedges and chopped parsley, for serving

Steps:
1. Heat the oven to 425°F. Line a large sheet pan with foil.
2. Toss the potatoes with 2 tbsp oil and half the Old Bay. Spread on the pan and roast 15 minutes.
3. Add the sausage and corn to the pan, toss with the remaining oil and Old Bay, and roast 10 minutes more.
4. Toss the shrimp with the melted butter and add to the pan. Roast 6-8 minutes until the shrimp are pink and curled.
5. Squeeze lemon over everything, sprinkle with parsley, and serve family-style.

Time: Prep 10 min | Cook 35 min | Total 45 min | Servings: 4-6

My take: Lining the pan with foil isn’t optional here — the butter and seasonings get gloriously messy, and you’ll thank yourself at cleanup time.

20. 15-Minute Miso Glazed Salmon

Why it works: White miso + honey + soy creates a caramelized glaze under the broiler that tastes like a Japanese restaurant appetizer. Salmon’s richness stands up to the bold flavors, and the whole thing takes 15 minutes.

Ingredients:
– 4 salmon fillets (6 oz each)
– 3 tbsp white miso paste
– 2 tbsp honey
– 1 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tsp sesame oil
– Sesame seeds and sliced green onions, for serving

Steps:
1. Position an oven rack 6 inches from the broiler and heat the broiler to high. Line a sheet pan with foil.
2. Whisk the miso, honey, soy sauce, vinegar, and sesame oil until smooth.
3. Place the salmon skin-side down on the pan and brush generously with the glaze.
4. Broil 7-9 minutes until the glaze is caramelized in spots and the salmon flakes easily. (Watch closely — the honey can go from caramelized to burnt fast.)
5. Top with sesame seeds and green onions. Serve with rice and steamed vegetables.

Time: Prep 5 min | Cook 9 min | Total 14 min | Servings: 4

My take: Leftover glaze keeps a week in the fridge and is incredible on chicken thighs or roasted carrots too.

21. Lemon Butter Cod with Asparagus

Why it works: One pan, mild flaky cod, and asparagus that roasts in the buttery lemon drippings. It’s the kind of light-but-satisfying dinner that makes you feel like you’ve got your life together.

Ingredients:
– 1 1/2 lbs cod fillets (or halibut), cut into 4 portions
– 1 lb asparagus, tough ends trimmed
– 4 tbsp butter, melted
– 3 cloves garlic, minced
– Zest and juice of 1 lemon
– 1 tsp salt, 1/2 tsp black pepper
– 2 tbsp chopped fresh parsley

Steps:
1. Heat the oven to 400°F. Line a sheet pan with parchment.
2. Arrange the asparagus on the pan and toss with half the melted butter, half the garlic, salt, and pepper.
3. Pat the cod dry and nestle it among the asparagus. Brush with the remaining butter and garlic, then sprinkle with lemon zest.
4. Bake 12-14 minutes until the cod flakes easily and the asparagus is tender-crisp.
5. Squeeze lemon juice over everything, sprinkle with parsley, and serve.

Time: Prep 10 min | Cook 14 min | Total 24 min | Servings: 4

My take: Frozen cod works fine here — thaw it overnight in the fridge and pat it very dry so it roasts instead of steams.

22. Teriyaki Salmon Bowls

Why it works: Crispy-edged salmon bites glazed in teriyaki, piled over rice with crunchy vegetables — it’s the homemade version of the poke-style bowls everyone loves, at a third of the price.

Ingredients:
– 1 1/2 lbs salmon, skin removed, cut into 1-inch cubes
– 2 tbsp vegetable oil
– 1/2 cup teriyaki sauce
– 1 tbsp honey
– 3 cups cooked rice
– 2 cups shredded cabbage or coleslaw mix
– 1 avocado, sliced
– 1/2 cup shelled edamame, thawed
– Sesame seeds and sliced green onions, for serving

Steps:
1. Pat the salmon cubes dry and season lightly with salt.
2. Heat the oil in a large skillet over medium-high heat. Sear the salmon 2 minutes per side until golden and just cooked through. Remove to a plate.
3. Lower the heat to medium. Add the teriyaki sauce and honey to the pan and simmer 2 minutes until thickened and glossy.
4. Return the salmon to the pan and toss gently to glaze.
5. Build bowls with rice, cabbage, avocado, and edamame. Top with glazed salmon, drizzle with extra sauce, and finish with sesame seeds and green onions.

Time: Prep 10 min | Cook 12 min | Total 22 min | Servings: 4

My take: The crunch factor matters here — don’t skip the cabbage. That contrast between crispy salmon, creamy avocado, and crunchy slaw is what makes the bowl.

FAQ About Easy Dinner Recipes

What are the easiest dinners to make on a weeknight?

The easiest weeknight dinners use one pan, minimal chopping, and cook in under 30 minutes. From this list, start with the 20-Minute Honey Garlic Chicken, One-Pot Lemon Parmesan Orzo, or 15-Minute Beef and Broccoli Stir-Fry — all three are on the table fast with almost no cleanup.

What can I make for dinner with chicken and not much else?

Chicken plus a sauce is dinner. Toss chicken pieces with honey, garlic, and soy sauce (recipe #1), or roast chicken thighs with just lemon and potatoes (recipe #5). If you have tortillas and cheese, quesadillas work with any leftover chicken. The formula is simple: protein + one bold flavor + one carb.

How do I plan easy dinners for the whole week?

Pick 4-5 recipes from this list, shop once, and assign each to a night — but keep two “flex” nights for leftovers or takeout so the plan survives reality. I theme my weeks loosely: one chicken night, one pasta night, one meatless night, one slow cooker night, one “whatever’s in the fridge” night. It takes 10 minutes on Sunday and eliminates the 5 p.m. panic.

What are some easy dinners that don’t need the oven?

Plenty here are stovetop-only: Honey Garlic Chicken, Beef and Broccoli Stir-Fry, Cheeseburger Skillet, Skillet Lasagna, Shakshuka, Teriyaki Salmon Bowls, and all the pasta dishes. If your oven’s busy (or it’s too hot to turn on), stick to the skillet and one-pot recipes.

What’s a good easy dinner for picky eaters?

Build-your-own formats win with picky eaters — Sheet Pan Fajitas, Teriyaki Salmon Bowls, and Cheeseburger Skillet let everyone customize. Also, anything cheesy and familiar (Baked Ziti, Skillet Lasagna, Chicken Parmesan Meatballs) tends to pass the kid test. When in doubt, serve components separately rather than mixed.

Can I meal prep these easy dinner recipes?

Yes — the best meal-prep candidates here are Slow Cooker Salsa Verde Chicken, Pulled Pork, Baked Ziti, Lentil Bolognese, and Black Bean Enchiladas. They all keep 4-5 days refrigerated and freeze well. Avoid meal-prepping the seafood recipes and anything with crispy textures (like the gnocchi) — those are best fresh.

What are the cheapest easy dinners to make?

Lentil Bolognese, Black Bean Enchiladas, Shakshuka, and One-Pot Lemon Parmesan Orzo all cost just a few dollars per serving — lentils, beans, eggs, and pasta are among the cheapest proteins and carbs you can buy. Buying chicken thighs instead of breasts and using frozen vegetables also cuts costs significantly across the whole list.

How do I make dinner fast without it tasting boring?

Bold flavors are the shortcut: a punchy sauce (teriyaki, salsa verde, miso glaze), fresh herbs or citrus at the end, and one crispy or crunchy element for texture. The difference between boring and delicious is rarely more ingredients — it’s finishing touches. A squeeze of lemon, a sprinkle of fresh herbs, or a drizzle of good sauce transforms the simplest chicken-and-rice into something craveable.

Final Thoughts on Easy Dinner Recipes

Here’s what I know after years of weeknight cooking: the best easy dinner recipes aren’t the ones with the fewest ingredients — they’re the ones you actually make again. Every recipe on this list earned its spot by surviving my busiest weeks, my pickiest eaters, and my lowest-energy evenings.

Start with one that made your mouth water while reading. Cook it this week. Then bookmark this page, because next Tuesday at 5 p.m., when the fridge stare-down begins, you’ll know exactly where to look.

Which one are you making first? Drop it in the comments — I read every single one, and I love hearing what lands on your table.
