Garlic Butter Chicken Bites

Cutting the chicken small creates more surface area for browning — and browning is flavor. The butter goes in at the end (not the start) so the garlic perfumes it instead of burning.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley

Method

  1. Pat the chicken pieces dry with paper towels (dry chicken browns; wet chicken steams). Season with salt, pepper, garlic powder, and paprika.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the chicken in a single layer — don't crowd the pan (work in two batches if needed). Sear 2 to 3 minutes per side until golden and cooked through.
  4. Push the chicken to the edges of the pan. Drop in the butter and let it melt, then add the garlic and cook 30 seconds until fragrant.
  5. Squeeze in the lemon juice, toss everything together, and shower with parsley. Serve immediately.
