Garlic Butter Steak Bites for Two

A big steak for two people means timing two doneness preferences at once. Bite-size pieces sidestep the whole problem — everyone gets exactly the pieces they want, and they cook in 5 minutes flat.
Prep Time 10 minutes
Cook Time 5 minutes
Servings: 2

Ingredients

  • 3/4 lb sirloin steak cut into 1-inch cubes
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tbsp chopped fresh parsley

Method

  1. Pat the steak cubes very dry with paper towels and season generously with salt and pepper.
  2. Heat the oil in a large skillet over high heat until shimmering — almost smoking.
  3. Add the steak in a single layer. Sear 2 minutes without touching, flip, and sear 1-2 minutes more for medium-rare. Remove to a plate.
  4. Lower the heat to medium. Add the butter and garlic; stir 30 seconds until fragrant.
  5. Return the steak to the pan, toss in the garlic butter, shower with parsley, and serve immediately.
